Southwestern Skillet Rice

INGREDIENTS

  • 1 pound ground beef
  • 1 tablespoon chili powder
  • 10.75 ounce can of condensed cream of mushroom soup
  • 14.5 ounce can whole peeled tomatoes (drained and cut up)
  • 15 ounce can kidney beans
  • 1 pouch of Success white rice (or 2 pouches if you’re extra hungry!)
  • Shredded cheddar cheese
  • Tortilla chips

DIRECTIONS

  • Brown beef in a medium to large skillet
  • Drain any fat and add chili powder
  • Stir in soup, tomatoes and beans and simmer
  • While mixture is simmering, cook rice
  • When rice is cooked, add to beef mixture and stir to combine ingredients
  • Sprinkle with cheese
  • Serve with tortilla chips on the side for dipping or crush up tortilla chips and sprinkle on top
