- 1 bag Success Rice
- 1 pkg Chicken Fajita Meat
- ½ each of Peppers – Red & Green
- ½ Sweet Onion
- 2-3 cups Shredded Cheddar Cheese
- 8 Tortillas (for 4 people)
Cook (or grill) the chicken fajita meat, dice when it’s done. Sautee the peppers & onions. Cook the Success Rice. On a large cookie sheet, lay out four tortillas, cover with shredded cheese, diced chicken, peppers & onions and rice. Top with a little more cheddar and another tortilla. Bake at 350 for about 10 minutes. Let sit at least 3 minutes and then slice with a knife (or a pizza cutter). ENJOY!
